Vaja: my childhood in an apple pie.

I have been thinking of posting a recipe for an apple pie for very long time, but somehow never got around, as I never managed to decide on the best version to make. Apple pie is one of those mythical concepts very difficult to grasp because everybody knows it but always in a slightly different version. Every household has a favourite recipe, which slightly differs from all the others and, as they are all likely to be very good, it is very difficult to pin down the ultimate one. So, in a sort of enlightenment, I realised there was no point in looking for the perfect apple pie, the one that would make everybody happy and, as usual, when I stopped overcomplicating things, it became clear that the only right choice was MY apple pie, or rather, the apple pie of my childhood.

Caramelised onion tart: the best of savoury baking

I have always being torn between the savoury/sweet dichotomy. Down to heart I am a truly savoury person: between a slice of pizza and a piece of cake, 99 out of 100 times I would go for the pizza, and a two course meal, for me, is a starter and a main, no question about it. At the same time, though, sweets dishes are the ones that I enjoy to make the most, the ones that stimulate my imagination and creativity and the ones I like the most to make for people I love to feed. This blog is the “living” proof of that.

I have probably wrote it already once or twice, baking is not only an art but to a large extent a science. Baking requires the same precision, experimentation and ingenuity as science and trying and testing a recipe is in many respects like optimising a protocol for a scientific experiment. Maybe that’s one of the reasons why I like baking so much.

One thing I learned since moving to Finland is that there’s no point in making projects and plans around weather and seasons, as there’s a quite good chance one might end up never do anything at all. If you live in Finland and you are waiting for a scorching hot Sunday to have a barbeque with friends or a sunny day without a drop of rain on sight to go for a walk by the lake, you might as well not even waste your time and just find yourself a nice book to read in the comfort of your home.
