Small treats 1: Coconut Macarons

This week I have decided to go a bit “all over the place”, I hope in a good way, and not to focus on one single item but prepare a trio of small treats. I like the idea of making a selection of simple sweets that are different but complementary, that can be shared with many people because anybody will find at least one item to enjoy and you can go from one to another without getting bored.

I will start with coconut macarons, soft and decadent sticky but melting in your mouth. I guess they are called macarons because they are based on meringue into which a powdered nut is mixed. However they have very little to do with the more classical patisserie delicacy with which they share the name. That does not make them any less delicious though. The recipe is very simple and if wanted it could be enriched with great coconut mates: chocolate, orange, cinnamon, lime, peanut, just to name a few. I like them very much plain, though, because you can enjoy the coconut in its full force and it makes a good sidekick for the two small treats to come.

Questa settimana ho deciso di diversificare e non concentrarmi su un solo dolce ma preparare un trio di dolcetti. Mi piace l’idea di preparare una selezione di dolci semplici ma diversi e complementari l’uno con l’altro, che sono ideali per essere condivisi e mangiati in compagnia perchè c’è qualcosa per tutti i gusti o si possono provare tutti e tre senza annoiarsi.

Comincio con i macarons alla noce di cocco, morbidi e ricchi che si sciolgono in bocca. Credo siano chiamati macarons perche’ gli ingredienti principaly sono meringa e un tipo di noce grattuggiata. Tuttavia non hanno molto a che vedere con i macarons classici ma sono comunque buonissimi. La ricetta è semplicissima e facile da seguire e volendo si puó modificare aggiungendo ingredienti che vanno bene in coppia con la noce di cocco: cioccolato, arancia, cannella, lime, arachidi per fare un paio di esempi. Io peró li preferisco “nature” perchè si puó apprazzare meglio il sapore completo della noce di cocco e si accompagna meglio agli altri due docletti che hanno un ventaglio di sapori un po’ più complessi.

Recipe
400g Sweetened Condensed milk
350g Dessicated coconut
1 vanilla stick
4 large (or 5 medium) egg whites
Preheat the oven at 160C.

Mix together the condensed milk, the vanilla pods and the coconut. Whisk to stiff peaks the egg whites. Gently fold the egg whites into the coconut mix. Pipe the batter into 3-4 cm rounds and bake for about 30 minutes or until golden brown on the surface. Cool completely before serving.
